New year’s Greetings to you all and what a better way to begin than with the announcement that the Safety Cove Cherries are back and as full-bodied, sweet and juicy as last year. Picked on Sunday. That’s the good news. The bad news is they are probably only with us for this week due to poor climatic factors. Although not certified organic, the trees have not been sprayed with any chemicals for 5 years.
• Van variety – stronger flavour slightly smaller more iron flavour
• Lapin variety – milder flavour larger juicier
Enjoy them and our Huon organic cherries while they last.
Staff
Staff changes are afoot, Tanya as planned was leaving us to move back to her home State of WA and has passed the baton onto Liz who has recently moved to Tasmania from WA with her partner. Liz is training in the shop at present and was the store manager at Manna Wholefoods in Freemantle. Meanwhile Tanya and partner have recently changed their plans and made the decision to stay on in Tasmania.

Our web site is being worked on by Lisa at the moment. Lisa is one of our talented juniors who you will see working in the shop from time to time. She is very experienced with web and graphic design and has been developing and expanding ours. So check us out at www.cityorganics.com.au

Local Sheep Cheese & Yoghurt
Sheep and goat dairy products are both unavailable as certified organic product. At City Organics we try and stock the best and purest products on the market and aim for local products wherever we can. Our range in both of these dairy products will be expanding as the demand for them is constantly increasing being generally better tolerated than cows milk products.
Grandvewe Sheep milk products from the Channel are now available at City Organics
Primavera - A traditional Manchego style of cheese with a smooth buttery flavour and a creamy finish on the palate. Only our spring milk is used for this cheese which is released from 2 months to 8 months of age.
Pecorino is a traditional Italian sheep cheese. Our Pecorino is a minimum of 8 months old before release. The flavour is sweet and fruity with a piquant finish. Delightful as an eating cheese and equally good grated over pasta!
Sheepurb Fresh - A fresh spreadable sheep cheese. Very creamy with a slight tangy finish on the palate. Great to serve with smoked salmon or wrap in a strong prosciutto.
Farmhouse Fetta - A creamy style fetta with low salt. Great through pizzas, salads, and filo parcels. Soak in water or milk before consumption if you want to reduce the salt levels.
Halloumi - A delightful traditional style cheese layered with organic mint. Halloumi is served lightly fried or grilled. Soak in water or milk beforehand to reduce the salt levels.
Natural Sheep Yogurt - As I am lactose intolerant I can only have sheep products. I love to use the natural yogurt as an alternative to cream. This yogurt is not tart, and has a delicious sweet/creamy taste
Honey & Vanilla Sheep Yogurt - This yogurt is very refreshing and is best served with fruit or over your favourite cereal.
Recipes
GF=gluten free DF= dairy free EF= egg free
Chai in a teapot (GF) “Our family recipe”
Ingredients
- Formosan loose tea (this tea won’t go astringent and bitter when left steeping even for longer periods of time, and can be left all morning and still taste good). Unfortunately not available organically.
- Cinnamon sticks: ground coarsely with cardamom in a coffee grinder or equivalent
- Cardamom pods
- ¼ to ½ inch of Fresh Ginger root
- Sweetener to taste (we use honey or natural sugar-free stevia)
- Milk of your choice
Method
- Boil your Kettle of water
- Heat your teapot with hot water then empty
- Add to teapot:
- (for a 4 cup pot) 3 heaped teaspoons of Formosan Tea (you need to use quite a bit of Formosan Tea for a richly flavoured cup)
- ¼ teaspoon of coarsely ground Cinnamon sticks and Cardamom pods
- fresh ginger root (grated with a porcelain ginger grater is the most effective but any fine grater will do)
- Add boiled water and wrap up your teapot to keep your tea cosy
- Leave for at least 5min then strain into cup and add sweetener and milk to suit your taste.
Buckwheat Pancakes with Tahini & Maple dipping sauce (GF DF EF)
Ingredients: Pancakes
- 1 cup of Buckwheat flour
- ¾ cup of brown rice flour
- 1 teaspoon of salt skip baking powder (not organic but a healthier alternative to standard baking powder)
- Pinch of Olsens Macrobiotic sea salt
- ¼ cup of ground golden or brown linseed and sesame or sunflower seeds (ground in coffee grinder)
- Water to create a medium batter
Optional
- An Egg
- Some fruit juice
Ingredients: Sauce
- ¼ cup of Tahini Hulled or Unhulled
- 1½ tablespoon of maple syrup (or to taste)
- ¼ cup of water (approx)
- Squeeze of lemon juice (optional)
Method
- Heat your heavy skillet or frypan nice and hot
- Put all the dry ingredients into a jug or bowl, add water to blend to batter
- This batter will thicken as you go along so you may need to add in some water if the pancakes are getting a bit thick when you pour them into the pan.
- Oil your pan (we brush it on thinly with a natural bristle pastry brush)
- Pour/ladle a pancake into the pan
- Cook a minute or two, then turn and repeat
- Cook as long as you prefer for either soft or crispy pancake
- Combine all the sauce ingredients
Blend until smooth with a fork - Adjust the water to suit your preference for a thicker or thinner sauce.
